Choose the Dual Mode Option at checkout and you’ll be able make charcuterie, sausage and dry-age long term. The computer controlled system gently introduces humidity into the PRO 40 so you can limit case hardening and pellicle growth while maintaining an average humidity of 75%.

Comes with a stainless steel enclosure and door, computer controlled humidity activation, and food safe fresh water pan for charcuterie making.
